What Meat Is Best for You?

Beef
Beef gets a bad rap because eating too much fatty, red meat is unhealthy.  On the other hand eating lean, red meat doesn’t raise cholesterol and has nutrients like protein, vitamin B12, niacin and zinc. A good example is the beef tenderloin, which is lean, delicious and healthy.
Lamb
Lamb is an excellent source of protein, omega-3 fatty acids, vitamin B12, niacin, zinc and iron.  An excellent recipe to make is Irish Beef Stew, with healthy vegetables and lean cuts of lamb.  The perfect meal to share with friends and family.
Bison
One of the leanest cuts of beef—is healthy from the start.  Compared with beef, it has the same fat content, but doesn’t make many fatty placques that lead to clogged arteries leading to heart disease.
Goat
While rare on U.S. menus—3/4 of the world eat it.  It has less fat and calories than other red meats with plenty of vitamins and nutrients and less saturated fat than chicken.  Indian Goat Curry is an excellent dish to try.
Chicken
Chicken is lower in saturated fat (the harmful kind) than most red meat.  Just 3 ounces per serving has 25 grams of protein and has essential amino acids, iron and niacin.  It also helps with cell growth and metabolism.  Try roasting the whole bird and serve with a simple side green salad.
Turkey
Like chicken, turkey has 9 essential amino acids (complete proteins) and is also lower in saturated fat than most red meats.  Those who cook turkey for Thanksgiving meal know how hard it can be to cook this bird.  Try an outdoor smoker for several hours until meat is tender.
Liver
Liver, especially if it’s beef liver, is one of the most nutritious meats you can eat.  It is an excellent source of quality protein, vitamins A, B12, B6, folic acid iron zinc and essential amino acids.  Try a beef liver pate with a glass of red wine as a compliment.
Pork
Pork can be as good for you as lean beef and chicken.  One study suggests substituting lean pork for beef or chicken can lead to less body fat and better for your heart.  For a spicy take:  try an ancho-rubbed pork tenderloin—it’s lean, flavorful and perfect for grilling.
